Where can I find Morey's products?

Do you smoke fish that consumers catch?
No, Morey's smokes fish supplied by commercial fisheries.

Do you ship product directly to consumers?
No, but Morey's brand products can be ordered through Amazon.com. They can be found in the food section of the Amazon web site. You can also call Seafood Markets at 1.800.548.9630 for details about direct mail order of all Morey's brand products.

What species of fish are most commonly smoked?
The most commonly smoked species of fish are Salmon, Black Cod, Whitefish, Lake Herring, Goldies/Whiting, Mullet, Carp and Ciscoes/Chubs. Please refer to Species of Fish Commonly Smoked for more information on each of these fish.

Are your products Kosher?

Marinated Salmon

What is Morey's Marinated Salmon?

Can I freeze Morey's Marinated Salmon?
Yes. If product was purchased refrigerated, freeze before the "Use By" date on the package - product can be used within 6 months. If product was purchased frozen, put in freezer and use within 6 months.   Product should be thawed under refrigeration overnight before use. Use product within one day of thaw.

What is Morey's Marinated Tilapia?
Tilapia is a mild-flavored, lean white fish. Its sweet, delicate taste and slightly firm texture is similar to cod or sole. Marinated Tilapia is available in three signature flavor profiles: Asian Sesame Ginger, Chili Lime and Lemon Pepper.

Smoked Salmon

What is the difference between hot and cold smoked salmon?
Hot smoking is achieved by processing fish at higher temperatures.   Fish prepared using this method is fully cooked and ready to eat.   Hot smoked salmon is drier in texture and visual appearance.   It is often compared to ham in texture and taste.

Cold smoking is a specialized process where fish is cured, not cooked.   Fish prepared using this method is ready to eat.   Because it is cured, cold-smoked product usually retains the texture and visual appearance of raw fish.

Morey's offers a full line of smoked salmon, including both hot and cold smoked products.

Is it okay to eat smoked salmon beyond the code date?
For best quality, we recommend using salmon by the code date stamped on the package.   We cannot guarantee freshness beyond the code date.

Can smoked fish be frozen?
Yes, wrap it tightly and freeze before the "Use By" date on the package.   Morey's products can be frozen up to 60 days beyond the "Use By" date.   Product should be thawed under refrigeration overnight before use.   Morey's smoked fish products should be used within 4-5 days of thaw.

What are the white spots on top of hot smoked salmon?
The white spots are coagulated protein that surface during the smoking process.   The white spots are not harmful, just as cooked beef or chicken juices can be eaten and are not harmful.

Can you cook Morey's smoked salmon?
Morey's smoked salmon is already fully cooked and ready to eat.   If you are adding it to a hot dish, add smoked salmon at the very end and just heat through.   It tastes great on its own and is also delicious when added to your favorite salad or pasta dish.

What is Keta Salmon?
Keta salmon is a type of Wild Alaskan salmon.   We use this kind of salmon for our hot-smoked portions because its texture is firmer and ideal for smoking.

Why does Morey's leave the skin on hot-smoked salmon?
We leave the skin on to keep the fish as moist as possible for your enjoyment. The skin also helps keep the fish from breaking before you consume it. Simply peel off the skin and discard before use. Morey's smoked salmon is fully cooked and ready to serve.

Smoked Whitefish

What is whitefish?   Where does it come from?
Whitefish is a freshwater fish. Morey's whitefish comes from clean, freshwater lakes in Canada.

Is it okay to eat smoked whitefish beyond the code date?
For best quality, we recommend eating smoked fish by the "Use By" date on the package.

Can you freeze smoked whitefish?
Yes, wrap it tightly and freeze before the "Use By" date on the package.   Morey's products can be frozen up to 60 days beyond the "Use By" date.   Product should be thawed under refrigeration overnight before use.   Morey's smoked fish products should be used within 4-5 days of thaw.

Spreads

There is no code date on the package.   How long is it good?
Your retailer code dates each package. Morey's ships spreads to the supermarket frozen with instructions to code date 30 days from the time of thaw. If there isn't a code date on your package, please contact the store where you purchased the product.

Is it okay to eat the spread if it is beyond the code date?
We recommend eating the spread by the date stamped on the package for best quality.   Once opened, cover the spread tightly and eat within 3-4 days.

Can spreads be frozen?
Yes. Freeze before the "Use By" date. Spreads can be frozen for 6 months. Thaw when ready to use and consume within 3-4 days of thaw.

Herring

How do you determine the expiration date of Morey's 3 lb. pails of herring?
Morey's Herring has a white label on the lid with a 5 digit code. This code represents the "Sell By" date or when it should be sold by to allow consumers another 45 days for Herring in Cream Sauce, and 180 days for Herring in Wine Sauce before expiration, if kept properly refrigerated.

Example: 04151

The first 2 digits of the "Sell By" code equal the month (04 = April).

The 3rd and 4th digits equal the day of the month (15 = 15th ).

The 5th digit equals the year (1 = 2001).

Species of Fish Commonly Smoked

Red King Salmon- From famous Alaskan waters.   Bright red, moist meat with a distinctive and delicate flavor.

Silver Salmon - Alaskan, medium moist meat, slightly less moist and milder flavored than King Salmon.

Keta Salmon - Also from Alaskan waters.   Light-colored, moist, rich meat with a distinctive flavor.

Sable, Black Cod - From Alaska.   Very white, flaky, rather soft meat with an extremely rich ocean flavor.

Whitefish- The fish that made Morey's famous.   A Canadian fish that is white, moist and slightly firm with a mild flavor.   Most popular of any smoked fish.
Lake Herring- Found in Lake Superior- the largest, clearest and coldest of the Great Lakes.   Of the whitefish family, this semi-moist meat has a medium flavor.   Very popular among Scandinavians.
Goldies/Whiting- Found off the coast of South America.   White, flaky, semi-moist meat with a distinctive ocean flavor.

Mullet - From Canadian waters.   Cream-colored dry, firm meat with a medium flavor.
Carp - Winter caught from the waters of west central Minnesota.   Very rich, dark meat with a flavor resembling baked ham.
Ciscoes/Chubs - Also from the Great Lakes, of the whitefish family.   Sometimes called "chubs," this fish is very rich and flaky and has a mild, distinctive flavor.

Understanding Kosher

What is Kosher?
The word kosher is a variation of the Hebrew word meaning "fit" or "proper." Simply put, kosher foods meet the dietary requirements and are prepared in accordance to the Jewish Law.

The determination of kosher and non-kosher foods depends on two variables: the source of the ingredients and the status of the production equipment. Kosher certification, which is the guarantee that the food meets kosher requirements, revolves around both of the above criteria.

Kosher fish must have both scales and fins. Shellfish such as shrimp and lobster are prohibited, as well as some fresh fish such as swordfish, sturgeon, catfish and eel.

Are Morey's products certified Kosher?
