General cooking tips
Regardless of your cooking method, remember that the recommended internal temperature of cooked seafood is 145°F. When testing temperature of seafood, place thermometer in thickest portion of seafood.
To cook from thawed, place fish in refrigerator overnight. To quick thaw, place fish (in its clear pouch) in cool water for 20-30 min. Use immediately upon quick thaw. Note: Do not thaw Mahi Mahi in plastic pouch.
When cooking thicker portions of fish, add 1-3 minutes additional cooking time. Be sure that fillets do not overlap during cooking, as this will cause the fillets to cook unevenly.
When grilling, place aluminum foil on grill rack and spray lightly with cooking oil to keep fish from sticking and breaking apart.
When baking, use a foil-lined baking pan for easier clean-up.
Microwave cooking: Testing done in 1100-watt oven. Add 1-3 min. additional cooking time when cooking 2 fillets. Cover microwave safe dish loosely with paper towel.
How to open pouches
Morey’s vacuum packs our fillets to ensure maximum quality and freshness. To remove the fillet from the pouch take a scissors and cut the pouch as close to the fillet as possible. You can cut on the end or the side of the fillet – just remember to cut as close to the fillet as possible to ensure you break the entire seal and will be able to squeeze the portion out of the pouch. Drizzle remaining marinade/sauce over the top of the fillet before cooking.

General cooking times:
Please read each package for specific instructions, but as a general rule, you may follow the below.
Preheat oven to 375°F.
Thawed: Bake fillet(s) 15-18 min. in center of oven.
Frozen: Bake fillet(s) 28-32 min. in center of oven.
Tip: For ease in clean-up when baking, use a foil lined baking pan.
Place, flat side down, on med-high grill.
Thawed: After 3-4 min., turn fillet over and grill an additional 3-4 min.
Frozen: After 6 min., turn fillet over and grill an additional 7-9 min.
Tip: Place aluminum foil on grill rack and spray lightly with cooking oil to keep fish from sticking and breaking apart.
Cover microwave safe dish loosely with paper towel.
Thawed: Cook on high 2-3 min.
Frozen: Cook on high 3-4 min.
After cooking, let stand in microwave 1-2 min., carefully remove.
Preheat nonstick skillet on low-medium heat. Place flat side up on hot skillet.
Thawed: Saute 4 minutes, turn fillet over and cover. Cook an additional 8-10 minutes or until done.
