  • Honey-Dijon Salmon with Asparagus: In a small bowl, combine one and one half teaspoons of cornstarch with two and a quarter teaspoons of butter, and one teaspoon of Worcestershire sauce, until smooth. Stir in two tablespoons of honey, one-tablespoon Dijon mustard, and a dash of white pepper. Place two four-ounce salmon fillets on two pieces of double thickness heavy-duty foil, drizzle with honey mixture, and sprinkle with one-quarter cup of chopped walnuts. Arrange one half pound of fresh, trimmed asparagus around salmon. Fold foil around salmon and seal tightly, then grill, covered, over medium heat for fifteen to twenty minutes, until the fish flakes easily with a fork.
  • Herbed Salmon: Preheat the oven to three hundred fifty degrees, then prepare one pound of salmon by cutting it into four portions, then rinsing and patting dry. (Chances are your favorite retail seafood counters will be glad to  pre-portion the fish for you.) In a small bowl, combine one teaspoon of lemon peel with one tablespoon each of snipped fresh dill weed and snipped fresh Italian parsley, one half teaspoon each of salt and pepper, and two tablespoons of softened butter. Spread this mixture evenly on the salmon, then place the salmon, herb side down, into an oven-going skillet on medium heat, and cook for three minutes. Turn the salmon over, pour the juice of one half a lemon over it, place the pan in the oven, and cook for three to seven minutes, until the fish flakes easily with a fork. Serve drizzled with pan juices, and topped with additional shredded lemon peel and snipped herbs.
