1 16oz package frozen mixed vegetables (broccoli, corn, red pepper)
2 TBSP butter
¾ cup onion, chopped
1 tsp minced garlic
1 (4oz) package sliced portobello mushrooms
2 TBSP all-purpose flour
1 ½ cups milk
2 portions Morey’s smoked Salmon, peppered
1-2 tsp Cajun seasoning (add based on preferred heat level)
Placed mixed vegetables in a pot with enough water to cover and bring to a boil. Boil vegetables until tender, drain and set aside.
Sauté onion, garlic and mushrooms with butter until tender. Stir in flour and cook until flour is browned, 1-2 minutes. Pour in milk and cook until thickened and beginning to bubble. Add the smoked salmon, Cajun seasoning and cooked vegetables, cook until heated through, about 3-4 minutes.
