1-2 TBSP olive oil
1 leek cleaned and diced, white and green parts
1 shallot, diced
3 green onions, thinly sliced
10 large eggs
1 cup plain yogurt
1 bunch fresh parsley, chopped
1 bunch fresh dill, chopped
2 – 5oz portions Morey’s Lemon Dill Salmon; cooked, skin removed and flaked
4oz shredded Gruyere cheese
Preheat oven to 400°F.
Heat 1-2 TBSP olive oil in a cast iron skillet over medium heat, make sure pan is evenly coated. Add the leek, shallot, green onions and sauté for 1-2 minutes. Turn heat off.
In a large mixing bowl. Add eggs and yogurt, whisk together then add the chopped parsley and dill. Pour mixture into skillet. Return skillet to medium heat and sprinkle with flaked salmon and cheese. Cook for 5-6 minutes or until beginning to set. Transfer skillet to the middle shelf in the oven. Baked for 12-18 minutes. Once set, remove from oven and allow to cool for 5 minutes.
Tip: Morey’s Smoked salmon is a great alternative to marinated salmon.
